Vineyard Age: 35 years
Soil : clay and limestone soils with a strong proportion of clay which give strong wines typical of the appellation.
Surface of the vineyard and production : 1.50 hectares
Wine making: Cold m aceration and alcoholic fermentation under temperature control of 31°C maximum, in tanks from 2 to 3 weeks.
Wine ageing and maturing: 10 to 12 months in barrels of 4 and 5 wines
General characteristics of the wine:
- Color: Dark ruby with blue reflection
- Nose: A fine bouquet (blackcurrant, blackberry).
- Taste: Powerful, vigorous with a good concentration of fine and round tannins. Beautiful balance of a neat wine-making. Long and spicy finish.
Harmony dish-wine : «Cîteaux» Cheese or game with wine sauce, hare, pheasant, quail or partridge will suit perfectly.
