Wine making: cold maceration then alcoholic fermentation under temperature control of 31°C maximum, in tank from 2 to 3 weeks.
Wine ageing and maturing: maturing in barrels with only one wine for about 12 months.
General characteristics of the wine:
- Color: Red
- Nose: Complex, good maturity of the fruit (notes of blackberries ), spices and fresh leather.
- Taste: Well- integrated tannins, beautiful balance.
Harmony dish-wine: Pheasant, roasted quail, venison, skewer
