Wine making: cold maceration then alcoholic fermentation under temperature control of 31°C Maximum, in tanks from 2 to 3 weeks.
Wine ageing and maturing: 12 months in vats from 2 to 4 years old. Ageing in s tainless tanks before being bottled.
General characteristics of the wine:
Color : Red
Nose : very rich smell with blackberry, dry prune and blackcurrant
Taste: flavors generally tannic with a good roundness
Harmony dish-wine : Red meat, grilled meat, skewers, beef with red-wine sauce
