Grape variety: Pinot Noir
Soil
: clay and limestone soil
Surface of the vineyard and production : 1.20 hectares
Wine making: cold maceration then alcoholic fermentation under temperature control of 29°C maximum, in tanks from 2 to 3 weeks.
Wine ageing and maturing: maturing in vats with only one wine for about 12 months.
General characteristics of the wine:
- Color: Red, dark ruby with blue reflection
- Nose: Very pure, rich, flavors of small black fruits (blackcurrant, blackberry).
- Taste: Suppleness, tender, finer than fleshy, tannins without hardness. Long, fresh and spicy finish. Very pleasant on the table at the moment.
Harmony dish-wine:
grilled meat, roasted chicken, fish cooked under salt crust.
