Wine making: Cool m aceration and alcoholic fermentation under temperature control of 26°C, fermentation in tanks from 2 to 3 weeks.
Wine ageing and maturing: 13 months in barrels of 2 to 5 wines
General characteristics of the wine:
- Color: Red
- Nose: Ripe cherry

- Taste: structure is mostly tannic, good acidity, red and black berries (blackcurrant, cherry, and blackberry) are typical of the Pinot.
Harmony dish-wine: Beef with wine sauce, deer or venison with Grand Veneur sauce
