Soil : The grounds are in limestone with stones, light and not too fertile soils.
Surface of the vineyard and production : 1.50 hectares
Wine making: Cold m aceration and alcoholic fermentation under temperature control of 31°C maximum, fermentation in tanks from 2 to 3 weeks.
Wine ageing and maturing: in vats of 1 to 3 wines during 12 months
General Characteristics of the wine:
- Color: Red like ruby
- Nose: fine, powerful/strong bouquet, fruits like cherry, black currant and raspberry stand out and are replaced after a few years by strawberry and undergrowth scents.
- T aste: suppleness, discreet tannins, light acidity, feminine wine
Harmony dish-wine: Red meat, fish, roasted pheasant, lamb, veal with tomato sauce.
